Darby’s Tavern – the perfect place to unwind after a day of classes – is a step back in time, allowing students to enjoy each other’s company in a room filled with history. Darby’s is tastefully decorated with replicas of authentic barn signs from the 1800s and tin-covered tables. It was here that Darby, a popular cook in the property’s history, perfected the training he received during his stay in New Orleans in Creole and Cajun cooking methods. The very fireplace used for cooking then is the centerpiece of the Tavern.
